Open it. Smell it. The smoke is already there — not the sharp, chemical kind, but the warm one that smells of charcoal on a Sunday afternoon. Smoke flavouring is the easy way. We put sea salt, garlic and paprika over beechwood instead. Real wood, real smoke. It goes deep, settles under the tomato and stays. The sweetness comes from agave syrup and from the concentrated grape must in the Aceto Balsamico di Modena IGP. No refined sugar, no glucose-fructose syrup: 19 g of sugar per 100 ml, where six common barbecue sauces average 28.2 g. Thick from reducing, not from starch. Eight ingredients. 30 % Alphonso mangoes go into this sauce, the variety India calls the queen: deep yellow, almost without fibres, tasting of honey and blossom. At that share you don't need sugar, so we didn't add any. Not refined sugar, not cane sugar, not apple juice concentrate. What's left is 5.1 g per 100 ml, out of the fruit. Contains naturally occurring sugars.
336 smallholders in Karnataka grow those mangoes in their own orchards. Comparable sauces on the shelf often stay under 10 %.
The texture comes from milled almonds, stone-milled mustard and cold-stirred rapeseed oil. No starch, no guar gum, no flavouring.

Yes. It's just rare on the shelf. Look at the ingredient lists in this category: modified starch, cornflour, xanthan, guar gum. Almost always at least one of them, because most cocktail sauces start with water — and water binds nothing. Ours starts with cold-pressed rapeseed oil. The creaminess is a real emulsion of oil, 3.5 % finely milled almonds and our own mustard. No thickener. No egg. No milk protein. 1A instead of E412. Eleven ingredients, all organic, all ones you know from your own kitchen. The sweetness is apple juice: 4.5 g of sugar per 100 ml, no refined sugar. Garlic, fennel, juniper berries, clove. Yes. Ours takes nine ingredients. Cold-pressed rapeseed oil. Apple juice. Stone-milled mustard. 4 % garlic. Cider vinegar. White wine vinegar. Onion. Sea salt. Chives. That's it. No thickener, no modified starch, no acidity regulator, no flavouring, no emulsifier. We looked at six garlic sauces and aiolis from the shops. All six contain a thickener, modified starch, or both — organic ones included. Ours is stirred creamy from the oil and the mustard alone. The mustard isn't a seasoning here, it's the tool: it holds oil and juice together. The white wine vinegar is made from Rivaner grown by a Bioland winemaker a few kilometres from our manufactory. Not heated.

What's in it. And what isn't. Tomato purée is the first ingredient. Sun-dried tomatoes from Sicily bring depth and umami, onion and garlic bring the savour, sun-dried paprika a sweetness that doesn't come out of a packet. 0.1 % chilli gives a heat that warms rather than burns. We raised the balsamico from 7 to 10 % Aceto Balsamico di Modena IGP. Balsamico is expensive, spirit vinegar is cheap, and ingredient lists show who decided what. No refined sugar: the sweetness is apple juice, tomato and grape must. 12 g per 100 ml, where the category runs from 16 to 42 g. The texture comes from the tomato, not from starch.

Those are all four ingredients in this sauce — nothing more is needed when the main ingredient is so good it speaks for itself. The Alphonso mango is considered one of the most aromatic mango varieties in the world. The aromatic Alphonso mangoes for our fruit sauce grow on organic mango plantations in southern India. They come from a sustainable project working with experienced smallholder farmers and are gently processed. The sweetness comes from the mango itself — complemented by a dash of apple concentrate.
