Virgin oils, manufactory vinegars and stone-ground mustard are the basis for our dressings and vinaigrettes - topped off by herbs and spices. Thickeners and other organic additives are consistently avoided. That's why the dressings don't taste like ready-made sauces - they taste like homemade. The distinguishing feature of our dressings: oil and vinegar can separate after a while - that is physics and a sign it's natural. Just shake them vigorously! Honey mustard dressing without thickeners — why does it separate in the bottle?
Because nothing in it holds it together. Ready-made dressings have to look flawless on the shelf for months. The industry manages that with xanthan, modified starch and egg yolk. We don't manage it at all.
Oil and vinegar separate. That's physics, not a defect. Give it a shake.
Recipe No. 1, made in Jens and Michael's shared kitchen before Emils existed. 11 % stone-milled Bioland mustard, which emulsifies all by itself. 6 % blossom honey from German beekeepers. 9 % extra virgin olive oil. Cold-pressed rapeseed oil as the base, not water. Cloudy cider vinegar from Baden-Württemberg — no spirit vinegar, not even in the mustard.
Rock salt. Black pepper. That's it.
No refined sugar. Not vegan, though: it contains honey.

Why is this Sylter dressing brown?
Because there is real balsamico in it. 13 % Aceto Balsamico di Modena IGP, made from concentrated grape must and wine vinegar, one of the best-known protected designations in northern Italy.
The colour is a consequence, not an effect. No colouring, no colouring foodstuff, no caramel syrup. What you see is the balsamico.
Sylter dressing is the dairy category: yoghurt, buttermilk, soured cream, egg yolk. Ours does without all of it — vegan and lactose-free, and nothing had to be rebuilt to get there. The balsamico brings the depth, our own mustard does the binding.
No xanthan. No guar gum. No modified starch. Oil and vinegar still separate in the bottle. Give it a shake.

A vinaigrette isn't an invention. It's a knack.
Most ready-made dressings use spirit vinegar: cheap, neutral, and good for exactly one thing — acidity. We use 7 % white wine vinegar from regional Pinot Blanc. A grape variety, not an industrial product. You can taste it.
And 12 % stone-milled Bioland mustard, more than in any other Emils dressing. It doesn't just season, it binds. Which is why there is no thickener in this bottle, and no egg either.
The first ingredient is cold-pressed rapeseed oil, not water. Onion, garlic, parsley and chives go in as themselves, not as extracts.
